Chicken & Navy Bean Chili with Fire Roasted Tomatoes

Brighten up this chicken dish with some fire roasted tomaotoes.

INGREDIENTS

>  1 tsp extra virgin olive oil

1 green pepper, chopped (1 cup)

>  1 red bell pepper, chopped (1 cup)

>  ¼ red onion, chopped (¼ cup)

>  16 oz chicken breast

>  1 (15 oz) can navy beans, undrained

1 packet chili seasoning

1 (14½ oz) can fire roasted diced tomatoes

METHOD

Step 1. 

Pre-heat oven to 350. Salt and pepper chicken breast and bake for 30-35 min until just cooked.

Step 2.

Once cooked, let cool and chop into pieces.

Step 3.

In a medium saucepan, heat the olive oil over medium heat; add peppers and onion and cook 5 minutes.

Step 4.

Add chicken, navy beans with liquid, diced tomatoes, and seasoning. Stir; turn heat to very low. Cook 10-20 minutes. Serve with light sour cream, if desired.

Tips

Get more greens by adding tender stem broccoli – cook in the pan with the noodles
