Cod with Roasted Red Pepper Sauce

Omega 3. Try his recipe with some roasted Red
Pepper.

INGREDIENTS

>  ½ cup roasted red peppers, chopped

>  1 clove garlic

>  2 tbsp mayonnaise

>  Salt, pepper

>  Cooking oil spray

>  ¾ lb cod fillets

METHOD

Step 1. 

Place peppers, garlic and mayo in blender pitcher. Puree until smooth. Season to taste with salt and pepper.

Step 2.

Spray a large skillet with nonstick spray and place over medium-high heat. When hot, add cod and season with salt and pepper. Cook until the bottom side is golden, then reduce heat. to medium and turn fillets. Cook until opaque throughout.

Step 3.

Serve cod with 2 tbsp sauce spooned over top.

 

Tips

Get more greens by adding tender stem broccoli – cook in the pan with the noodles
