Egg Muffins

INGREDIENTS

 >  6 whole eggs

>  6 muffins

 1 cup of egg whites

 ½ tbsp olive oil

 1 cup broccoli, finely chopped

 1 cup mushroom, finely chopped

>  ½ cup onion, chopped

>  2 cups rocket

METHOD

Step 1. 

Preheat oven to 350 F Grease muffin tin and set aside

Step 2.

Using a food processor or blender, pulse the raw broccoli until it’s finely ground, set aside and chop mushrooms and onions

Step 3.

Heat frying pan over medium heat and add oil. Sauté mushrooms and onions until tender. Combine mushroom and onion mixture with broccoli. Stir to combine.

Step 4.

Using a tablespoon, spoon the vegetable mixture into the bottom of each muffin tin.

Step 5.

Combine whole eggs with liquid whites. Whisk until combined.

Step 6.

Pour egg mixture over vegetables until ¾ full. Bake for 15-20 minutes or until firm. Served on light bed of rocket and muffins.

 

Tips

Get more greens by adding tender stem broccoli – cook in the pan with the noodles
