Tossed Chicken Salad

Season up your chicken with this delicious mushroom sauce.

INGREDIENTS

 6 oz baked chicken breast, marinated with olive oil, herbs of your choice, salt and pepper.

 2 cups mixed green lettuce with 4 slices tomato, ½ cup of diced cucumber,

 ½ cup peppers (any colour)

 1 tsp extra virgin olive oil with 1 tbsp apple cider vinegar

 ½ – 1 cup canned chickpeas, drained and rinsed

  

METHOD

Step 1. 

Bake chicken in pre heated oven (400 degrees) for 16 to 22mins. Rest the chicken.

Step 2.

On a large plate, layout the salad adding dressing before placing the baked chicken breasts.

Step 3.

Add extra virgin olive oil and apple cider vinegar and serve.

 

Tips

Get more greens by adding tender stem broccoli – cook in the pan with the noodles
